Vegetarian Bolognese sauce

- 2 tbsp olive oil
- 1 onion, chopped
- 1 carrot, finely diced,
- 1 stick celery, finely diced
- 1 clove garlic, crushed
- 454g pack vegemince
- 3 tbsp tomato puree
- 1/4 pint soya milk
- 1.4 pint red wine
- 1 x 400g can chopped tomatoes

- Heat the oil, onion, carrot, celery and garlic until lightly browned. Add half the pack of vegemince and the tomato puree and cook, stirring for ? mins. Stir in l (pt) each of soya milk and red wine then add can tomatoes and water. Season with oregano, nutmeg, muscovado sugar, salt and pepper.
