Warm Potato, Bacon and Lancashire Cheese Salad

Ingredients

  • 750g waxy-fleshed new potatoes, such as Charlotte or Nicola
  • 1 bunch spring onions, trimmed
  • 6 tbsp olive oil
  • 255g dry-cured bacon, smoked if wished
  • 1 tbsp mustard seeds
  • 1 tbsp wine or cider vinegar
  • 1 tbsp chopped flat-leaf parsley, plus a few whole sprigs
  • 125g mixed green salad leaves
  • 125g Lancashire cheese, such as Butler's Farmhouse, thinly sliced
  • salt and freshly ground black pepper

Directions

  1. Cook the potatoes in plenty of boiling, salted water until just tender. Drain, cool, and peel &# or not &# as you prefer. Slice into a bowl. Slice spring onions and add to the potatoes with tbsp oil, and a good grinding of black pepper, mix and set aside for - minutes.
  2. Preheat the grill, brush the spring onion off (but reserve) and place the potatoes on a foil-covered grill tray. Grill for minutes each side until golden brown. Add the whole spring onions for the last minutes, turning once, set aside and keep warm.
  3. Heat the remaining tbsp oil in a frying pan over a medium heat. Cut each rasher of bacon in half and fry in the oil until brown and crisp, set aside. Add the reserved chopped spring onion and mustard seeds to the pan and cook for a few minutes. Switch off the heat and add the vinegar and chopped parsley, swirl around then season to taste.
  4. Place the salad leaves in a bowl with the cheese. Add the cooked potatoes and spring onions, toss to mix then toss in the warm dressing. Place on plates and top each with a pile of bacon strips and a few sprigs of parsley. Serve immediately.
