Warm Wok & Salmon Salad

Simply serve with garlic bread for a light, yet delicious main course.
 

Ingredients

  • 1 bag of any Findus Wok
  • 2 salmon fillets
  • 400g new potatoes
  • 150g mixed salad leaves
  • 2 tablespoons olive oil
  • salt & ground black pepper
  • Dressing
  • 1 tablespoon lemon juice
  • 3 tablespoons olive oil
  • 1 teaspoon chives, chopped

Directions

  1. Preheat the oven to 180C/Gas Mark 4. Place the salmon on a piece of tin foil, drizzle with tablespoon of olive oil, season and seal using the tin foil to create a parcel. Place in the oven for 15-20 minutes.
  2. Cook the potatoes in boiling, salted water. Drain well, and set to one side.
  3. Stir fry the Findus Wok vegetables in a little oil on high for 2-3 minutes.
  4. Place the salad leaves in a large bowl, add the Findus Wok, cooked potatoes and toss lightly.
  5. Remove the skin from the cooked salmon and discard. Break the salmon in to large chunks, and place on top of the salad.
  6. Mix all of the dressing ingredients together, whisk well, and drizzle over the salmon and salad mixture.
