Warm Wok & Salmon Salad

Simply serve with garlic bread for a light, yet delicious main course.
Ingredients
- 1 bag of any Findus Wok
- 2 salmon fillets
- 400g new potatoes
- 150g mixed salad leaves
- 2 tablespoons olive oil
- salt & ground black pepper
- Dressing
- 1 tablespoon lemon juice
- 3 tablespoons olive oil
- 1 teaspoon chives, chopped

- Preheat the oven to 180C/Gas Mark 4. Place the salmon on a piece of tin foil, drizzle with tablespoon of olive oil, season and seal using the tin foil to create a parcel. Place in the oven for 15-20 minutes.
- Cook the potatoes in boiling, salted water. Drain well, and set to one side.
- Stir fry the Findus Wok vegetables in a little oil on high for 2-3 minutes.
- Place the salad leaves in a large bowl, add the Findus Wok, cooked potatoes and toss lightly.
- Remove the skin from the cooked salmon and discard. Break the salmon in to large chunks, and place on top of the salad.
- Mix all of the dressing ingredients together, whisk well, and drizzle over the salmon and salad mixture.
