Welsh Cakes with Honeyed Apples and Caerphilly Cream

- For the Welsh cakes:
- 50g butter
- 50g lard
- 225g self-raising flour
- 75g caster sugar
- 75g currants
- ½ tsp mixed spice
- 1 tsp clear honey
- 1 large egg, beaten
For the apple layer:
- 25g butter
- 2 cooking apples, peeled, cored and diced
- 2 tbsp clear honey
For the Caerphilly cream:
- 125g Caerphilly cheese, grated
- 6 tbsp single cream
- icing sugar (optional)

- To make the Welsh cakes, rub the butter and lard into the self-raising flour. Add the sugar, currants, mixed spice and honey. Add the beaten egg and mix to a firm dough.
- Roll out the mixture on a lightly floured surface to m/n thick, then cut out - x m//n discs. Heat a heavy-based frying pan, ideally non-stick, over a low-medium heat and cook the cakes until golden on both sides about minutes in total. Keep warm.
- To make the apple layer, melt the butter in a medium pan and cook the apples with the mixed spice until they turn soft and pulpy, about minutes. Stir in the honey to taste.
- Mix together the Caerphilly cheese and the single cream.
- To serve, split each Welsh cake and arrange one thin disc in the centre of each serving plate. Spread over a layer of Caerphilly Cream, then add a good spoonful of spiced apple. Place the remaining Welsh cake disc on top at an angle. Dust with icing sugar if you like.
