A simple variation on the classic green-leaf salad.
Ingredients
- 2 tbsp lemon juice
- 1 tbsp tarragon vinegar
- 125ml light oil (olive or sunflower)
- salt and freshly ground black pepper
- 150-200g wild rocket, chopped
- Parmesan shavings (optional)

- Whiz everything except the rocket and the Parmesan in a food processor or blender.
- Toss the dressing through the rocket. Top with Parmesan shavings if desired.
