Zerde Saffron Rice Pudding

- 125g pudding rice
- 100g caster sugar
- 1 litre milk or water
- 2 large pinches saffron threads
- 2 tbsp arrowroot
- 4 tbsp currants
- 4 tbsp pine nuts, toasted if preferred
- 1 pomegranate, halved and red seeds removed from the casing

- Wash the rice and place in a large saucepan with the sugar and milk. Stir well and bring to a simmer for about minutes, partly covered, until the rice is tender.
- Dissolve the saffron threads in tbsp boiling water and stir into the rice. Mix the arrowroot powder in tbsp cold water until dissolved and stir into the rice. Cook gently, stirring constantly, until the rice mixture thickens.
- Serve warm or cold topped with the currants, pine nuts and pomegranate seeds.
